Thai Fish Cakes…

Ingredients:

This recipe made 18 medium sized fish cakes. 

  • 3 large fillets of mackerel or another meaty white fish (chopped up mine filled 2 cups)
  • 8 Kaffir lime leaves
  • 2 large free range eggs
  • 1 tsp of fresh ginger
  • 2 small birds eye chilli’s
  • 1/2 small red onion
  • 1.5 tsp soya sauce
  • 1 tsp fish sauce
  • 2 tbsp fresh cilantro
  • 1 tsp ground black pepper

Instructions:

  1. Roughly chop fish and add to a food processor
  2. Follow by adding the remainder of the indredients to the food proccesor
  3. Blitz until your fish cake mix begins to form a ball (or until all minced and combined)
  4. With wet hand form medium sized patties with your mix. Not to thick as they will cook unevenly.
  5. Cook on a high heat in a well greased pan or hot plate until golden and cooked through.

These are bursting with fresh vibrant flavours, and so simple to make. I served mine with a homemade sweet chilli sauce and a simple thai style carrot salad. Thanks again, and I do hope you Enjoy!

Raw Protein Guacamole & Salsa Stuffed Tomatoes…

Ingredients:

  • 3 Medium Tomatoes
  • Hemp Seeds (to garnish & add additional protein)

Protein Guacamole:

  • 1 Ripe Avocado
  • 1 tbsp Raw Protein Powder (plain unflavoured)
  • 1 tbsp Olive Oil (cold press)
  • 2 tsp Ground Cumin
  • 2 tsp Apple Cider Vinegar
  • 1 Pinch Celtic Sea Salt
  • 1 Pinch Ground Black Pepper

Green Salsa Topping:

  • 1/4 Red Onion (diced)
  • 1/4 Green Capsicum (diced)
  • 1 heaped Tbsp Black Spanish Olives (diced)
  • 1 Sprig of Spring Onion (finely chopped)
  • 1 Tbsp Cilantro (finely chopped)
  • 1 pinch of Smoked Paprika
  • Juice of half one lime

Instructions:

  1. Cut tomatoes in half, and scoop out centres
  2. In a food processor add all your guacamole ingredients and blitz until smooth and creamy
  3. Prepare all your salsa ingredients in a mixing bowl, and mix when finished
  4. With a spoon divide the guacamole into the 6 tomatoes halves and fill
  5. Top guacamole filled tomato’s with your salsa until all are evenly dispersed
  6. Lastly sprinkle with hemp seeds to garnish

These are a GREAT Quick bite, fresh packed lunch, or even just an afternoon snack. They are great to look at, and so tasty! I’m always trying to amp up my protein as I eat a lot of raw foods. The protein guacamole is such a great way to do that, yet stay clean and green! I hope you enjoy these as much as I did!

Two Things -

1. No. Matt has NEVER asked me to change. Throughout our relationship I’ve been various sizes (as well as pregnant) and I have been very loved throughout. He has never made me feel like less than a lady and in my moments of insecurity has said, ‘I love you as you are, you’re my LouLou’. *Heart melts*. If I said I was going to loose 40lbs Matt would support it. If I said I was happy as I was, he’d be completely fine. 

2. Decent men (and women) don’t value your entire worth and attractivity on the circumference of your waist or the number of pounds a scale flashes up. You are SO MUCH more than just your body. People are attracted to things like humour, kindness, confidence, creativity, etc etc. Of course, physical elements are appealing but not the entire package.

Have confidence. It’s very sexy.
